Topa opened on May 21, 2026, on the roof of the AC Hotel Detroit at the Bonstelle on Woodward. The name is a Basque word for toasting, and the whole place leans into that seaside, glass-clinking mood, inspired by European coasts and California. Chef Jorge Morales runs a shareable menu of seared halloumi, bacalao croquettes, dips and skewers like barramundi with Persian rice. The cocktail list follows the same Mediterranean thread, with the downtown skyline as the backdrop.
