The Bricks Pizzeria fires its pies in a 750-degree wood-burning oven, using a sourdough crust built on long, cold fermentation. Much of what goes on top comes from Fox Hollow Farm, the restaurant's own 20-plus-acre cooperative farm in Metamora, which grows grain for fresh-milled flour, raises chickens and ducks for eggs and keeps honeybees. They say everything is sourced within 100 miles. House-made pasta and salads round out the menu, and there's a private room for parties.
