01 / The story of this place

Make time for these

The name comes from bibimbap, the Korean rice bowl of seasoned vegetables and chili paste, and the chain serves it counter-style: pick a base, add vegetables, choose a protein, top it with sauce, then mix it all up. Regulars start with purple rice, a nutty, antioxidant-rich whole grain, add Korean BBQ beef or organic tofu, and finish with yum yum sauce, creamy and a little sweet. There are gluten-free, vegan-friendly and protein-packed builds, and the whole kitchen is certified gluten-free. On opening day, November 5, 2026, 100 guests win a year of BIBIBOP, one free bowl a month for twelve months, from scratch-off tickets handed out only at the Canton restaurant that day. No purchase is needed, it lasts while supplies do, and you must be 13 or older to redeem a prize. Wear orange and you get $5 off your in-store order. Charley Shin, the Korean American founder of Charleys Cheesesteaks, started the chain in Columbus, Ohio, in 2013. Every restaurant is company-owned, and the first Michigan one opened in East Lansing a few weeks before Canton.
